How to regrow scallions or green onions
Green onions are an excellent flavor enhancer to soups, sandwiches, dips and more. We eat our way through this green goodness faster than we return to the grocery store. So, if you aren’t already growing green onion in your backyard, and even if you, are you can save money and reuse your green onion simply by growing them again in your kitchen window!
How to regrow scallions or green onions in two days
- First, use up those new green onions while they are fresh and bright! Put them in your chicken salad, toss them on top of your morning eggs, or stir them into your soup starter.
- Get a glass filled roughly two inches of water, enough to cover the roots. Filtered water is best because any chlorine or additives can inhibit the organic growth of the new shoots.
- Place your glass in a south facing window (or the closest you can get) and wait.
- Replace the water each day with new water.
- New scallions will be ready to use in as little as two days! They may grow slower in the winter, but you can still use them in a pinch, even if they aren’t that long. Scallions can be regrown a couple of times, but will eventually run out of nutrients and stop their regrowth. Then it’s back to the store, or garden!
Now that you know how to keep a steady supply of scallions in your kitchen, how do you use them up? The wonderful thing about scallions is they do a great job of replacing traditional white or yellow onion, and are Low-FODMAP, too! Try these simple ways to add more nutrients to your food:
- Add to a mixed green salad.
- Slice into your morning omelette.
- Add to sour cream for dipping your favorite veggies or chips.
